GELATO PRO is an AI-powered software that uses the principles of analytical table. It allows you to create, balance, and analyze your ice cream, frozen dessert, and sorbet recipes in few seconds. It also calculates the Freezing Point, which represents the "ideal" serving temperature (optimal scoopability), or the energy value of your recipe or the price cost of your recipe.

Powerful software

Unleash your creativity. Gelato Pro lets you combine up to 4 different flavors:

  • flavourings for fruit purees (100% purees or sweetened purees)

  • flavorings for dried fruit pastes and pralines

  • chocolates (Barry, Valrhona, Chocolaterie de l'Opéra etc.)

  • various flavors (vanilla, speculoos, etc...)

 

The software allows you to combine up to 5 different sugars from a selection of 15 different sugars.

 

The range of dairy products needed is also very wide (whole milk, semi-skimmed milk, skimmed milk, 0% or 26% milk powders, various creams from 12% to 40% fat etc...).

 

The app also allows you to manage your ingredients, suppliers, update your price lists, etc., and has two display modes: dark or light.

The importance of balancing your recipe

Balancing a mix recipe is essential to obtain ice cream with good organoleptic quality.


The balance of the recipe is the calculation of the percentage of the different ingredients that make up the mix;
depending, for example, on the percentage of total fat, the proportion of different sugars, or the percentage of milk-solids-not-fat (MSNF) chosen for its recipe.


The right balance (the right proportions) of the different ingredients provides the structure to the mix in order to obtain the best final result and the following qualities:

 

  • flavor

  • creamy texture

We have automated this into a simple, easy-to-use software program.

Thanks to Gelato Pro, the calculations of ingredients based on the designer's different choices are immediate and automatic.
